Cambodia is a country of contrasts. Full of hope and sadness, beauty and garbage, old colonial architecture and new skyscrapers popping up everywhere. The food is equally full of contrasting flavours: sweet and bitter, rich and sour, raw and cooked down. Fortunately for us celiacs, the country mostly relies on food grown inside its own borders, and since this is rice country that means most of the food here is gluten free - down to the soy sauces commonly found here!
