An essential Japanese ingredient used in marinades, sauces, and dressings, mirin has a lower alcohol content and higher sugar content than sake. All mirin should be gluten-free in theory, but double-check the ingredients list for wheat flour, as some are not.
Substitute: 1:1 mixture of cooking sake and maple syrup
