White miso paste is the most likey type to be gluten-free, since it is typically made with rice. Yellow and red misos pastes may contain barley. Iām not too particular about the color, but the darker, the more intense in flavor. For a soy-free alternative, try sourcing chickpea or adzuki bean miso.
