gf doubanjiang is definitely hard to source and does require some intensive label reading in-stores.
you could always substitute it with 1 part each of gluten-free miso paste, tamari, sambal oelek, and chopped olives. for example, if you need 4 tbsps. of doubanjiang, use 1 tbsp. of each.
you could also use gluten-free gochujang (korean chili bean paste) instead of miso and sambal, and add the tamari and olives to that.
